The vegetable gardens of the region offer a huge variety of legumes and vegetables while the ranching is the activity that produces meat, a product that is highly valued in here. During the 4th Sunday of October, the quarter of Alzate celebrates de Lurranen Eguna - Day of the Earth. The streets become a market where visitors can buy the local products while cider and cheese sellers offer their specialties. The Bidasoa River is a source of trout and salmon, both very common at the beginning of the season.</p><p>The most popular meats when eating in Vera de Bidasoa are the calf and lamb. Are you coming to Sangüesa with us?<h3 class="vc_tta-panel-title">What to eat in Sangüesa</h3>Sangüesa is a small village from Navarra, located close to the frontier with Aragón. The proximity of the vegetable garden areas brings a varied collection of ingredients to the kitchens, with which dishes such as the <em>menestras</em> are made. Beginning in August, the most famous gastronomic product from Sangüesa starts to grow: the<em> pochas</em>. These are small white beans, which are ate when they are ripe and are served in any restaurant of the city, by themselves or with vegetables or hunting meats.</p><p>There is nothing better to drink with a <em>potaje de pochas</em> than the wine selection of the region, with products such as the D.O. Navarra, D.O. Pago de Arínzano, D.O. Pago de Otazu and D.O. Prado de Irache. The gastronomic offer is completed with some other traditional dishes such as the lamb<em> al chilindrón</em>, the trout with ham, the grilled cow meat and the <em>ajoarriero</em>.</p><p>The desserts are also famous in the region. The <em>huesos de santo</em>, <em>virutas de</em> San José and the <em>tortas de</em> Txantxigorri are some of the specialties of Sangüesa. Come with us!<h3 class="vc_tta-panel-title">What to eat in Tudela</h3>Tudela is known for having the best vegetable garden of Navarra. The fertile lands, watered by the Ebro River, especially the ones located in La Mejana region, are the sources of the famous fuits, legumes and vegetables of the town. Some of them are the asparagus with I.G.P. Navarra, peppers, spouts, peas, borage, <em>pochas</em> beans and artichokes with I.G.P. Tudela. The main dish of the region is the <em>menestra</em>, made with different ingredients depending on the time of the year. The legumes stews and soups are also very common and always present in the menus of the restaurants from Tudela. The vegetables of Tudela are usually eaten with the oil from Navarra with D.O.P., produced in this area.</p><p>Between the meats, the most popular ones are the lamb and the calf. The first one if eaten roasted and the second one grilled. The<em> calderetes</em> are very frequent in this region from Navarra, specially in special occasions. As for the desserts, Tudela has many specialties such as the <em>cafareles</em>, the <em>mantecadas</em> and hazelnut cookies, created by the Bakery Salinas, which sadly closed its door in 2008. The Holly Week is one of the biggest celebrations of the area, a perfect occasion to enjoy everything there is to eat in Tudela. The proximity of the vegetable gardens to the south enables the village to have excellent seasonal vegetable products. With them, one of the most typical dishes from Navarra is prepared: the vegetable <em>menestra</em>, made with peas, asparagus with I.G.P. Navarra, green beans, mushrooms and more vegetables, such as the famous artichoke of Tudela with I.G.P.. The legumes also have an important role in everything there is to eat in Funes. The cuisine is conditioned by the pastoral lifestyle of the area. The <em>migas de pastor</em> is one of the most common dishes from this town. The calf meat is the most popular, generally in the shape of large steak, sirloin or entrecôte. The urban center of the village was built on a meander of the Erga River, a thing that makes the procedure of watering the vegetable gardens from the region easier. Peppers, asparagus with I.G.P. Navarra, artichokes and different kinds of legumes grow in the lands from Estella, creating a menu where the <em>menestras</em>, ratatouille of vegetables and other specialties are very common. Between the meats the baby pork is very common, but the cow meat, lamb and hunting meats are popular here. The cuisine of the town is based on recipes that are transmitted from parents to children, in which the natural ingredients are the base to the cooking of any dish. The village has many famous products such as the tomatoes from Artajona, the oil from Navarra with D.O.P., the asparagus from Navarra with I.G.P. and artisan <em>embutidos</em> (sausage) such as the <em>chorizo</em> and the <em>chistorra</em>.</p><p>The most eaten meat is the calf and the lamb, but it is also very common to consume meat from other species from the world of hunting. In the menus from the local restaurants we can find many typical dishes from de gastronomy of Navarra such as the <em>ajoarriero</em>, the vegetables ratatouille and the trout with ham, all of them very popular when eating in Artajona. Many good wine products are produced in here, such as the wines with D.O. Navarra, Pago de Arínzano, Pago de Otazu and Prado de Irache.         <content:encoded><![CDATA[<p><h2 class="vc_custom_heading">Eating in Elizondo</h2>The capital of the Valley of Baztán, this village has always been connected to the Trilogy of Baztán, a black Spanish novel where the protagonist of the story was born in <strong>Elizondo</strong>. Regardin its gastronomy, eating in Elizondo brings people the opportunity of trying recipes such as the <em>baztanesa</em> soup, perfect to get warm after a cold day.<h3 class="vc_tta-panel-title">What to eat in Elizondo </h3>Elizondo is a village full of stately homes and small palaces, the capital of the valley of Baztán and divided in two parts by the river that has its same name. The gastronomy of the region reproduced the culinary tradition from a valley that has many similarities to the cuisine from the Basque lands. The kitchens prepare calf large steaks, lamb <em>al chilindrón</em>, stuffed peppers, red beans and salads made with vegetables from the local vegetable gardens. This is also an area of elaboration of the cheese with D.O. Idiazábal, very popular between everything there is to eat in Elizondo.</p><p>There are many typical dishes from the Bastán valley that are also prepared in this village. One of them is the <em>baztanesa </em>soup, a thick mix of lamb broth with big bread parts. The <em>zuri eta beltz</em> (white and black) is a filling dish: a white <em>embutido</em> that is typical from the valley, covered in a black sauce made of blood and onion. Between the most representative desserts we find the <em>cuajada</em> of sheep's milk and the <em>urrakin egina</em>, a chocolate stuffed with whole hazelnuts. Come with us!<h3 class="vc_tta-panel-title">What to eat in Tafalla</h3>The gastronomy of Tafalla is strongly connected to fresh vegetable garden products and is known for having a simple cuisine. This reminds us about the traditional flavors from our grandmother's recipes. The proximity to the fertile vegetable gardens from the south is the reason why artichokes, aspargus with I.G.P. Navarra and pepers are common. If there is one that is especially famous, that's the <em>ajoarriero</em>, which is common in the kitchens and tables of the village during the whole year, but mainly during the Lent.</p><p>Regarding the meat, the lamb <em>menudicos</em> served with tripes and the lamb's blood, are delicious. A variation of this dish is the<em> pantorrillo</em>, which consists on adding lamb's pays and intestines to the mix and making a braid with it.</p><p>Other common dishes are the vegetable <em>menestra</em>, asparagus, peppers, roasted lamb, lamb <em>al chilindrón</em>, roasted<em> gorrín</em>, hake<em> a la cosquera</em>...
